Healthy Snack - Crabmeat Avocado filled Cucumbers, NOM!

Best snack ever! Just like a California Roll except way healthier! The crab meat and avocado sits in a hollowed out cucumber boat! How cute is that? It's refreshing, tasty and can serve as a great snack between meals. The creamy texture of the avocado mixed with the natural saltiness of the faux crab meat and the crunch of the cucumber makes this snack to die for! This can even serve as a fancy appetizer for when you have guests over! It's easy to prepare and you will only need 3 ingredients and probably less than 10 minutes. Crab Meat and Avocado Filled Cucumber Boats
Ingredients
1 cucumber
6 faux crab sticks (these can be found in any super market and are super cheap at Asian markets!)
1/4 avocado
  1. Peel the cucumber.
  2. Cut the cucumber in half and then in half again length wise.
  3. Scoop out the seeds.
  4. Remove the 6 faux crab sticks and shred with either your fingers or a fork, whatever is easier for you.
  5. Now, cut the avocado in thin slices.
  6. To fill, take a little bit of shredded faux crab meat and put it into a cucumber boat. Then top with a few slices of avocado. Continue to do this until you have filled all of the boats. 

Easy right? This snack is fulfilling and so delicious! You can even give it a spicy twist by making this super easy sauce to go with it.
Spicy Mayo w/ Roe
Ingredients
1 T. mayonnaise (any kind works)
1 Tsp. sriracha (can put less if you want it less spicy, adjust to your liking!)
1 Tsp. roe (these are sold in boxes in the freezer section of most Asian markets!)

Mix all of these ingredients together and it's done. You can either throw the shredded crab meat into the sauce and mix well until combined or drizzle it over the already filled boats. Either way, its up to you depending on how you like to eat it. Hope you will enjoy! Let us know what you think!
