Perfect Soup Weather - Cheddar Cauliflower Soup, YUM!

I'm walking my dogs this morning in this wet, nasty snow mix and all I could think about was how perfect it would be to have a nice, hot bowl of soup right now. It's cold and wet, not to mention super windy outside too. Rogue E Bear definitely was not having it and did not want to go. We trekked around for about 45 minutes before she would let me come inside to make that awesome bowl of soup!

Because it's nearing the end of the week, our fridge is a little more bare than usual. I knew we had a half a head of cauliflower left, some onions, potatoes and string beans. Then, there were some porkchops, probably what I'll make for dinner tomorrow night since I have plans with the girls tonight. I also found some cheese, garlic and that was it. I know, it sounds like a lot, but we are always stocked in potatoes, onions and garlic - 3 of the things that bub (the hubs) would never say no to. I figured why not whip up a cheesy veggie soup? It was the best opportunity since the hubs doesn't like cheese (I know! Who doesn't like cheese?!) and won't eat anything except pizza with cheese on it.

So there we have it, Cheddar Cauliflower Soup! So good, so easy and you don't even have to break a sweat making it. If you are interested in trying this recipe out, please keep reading below! Note that you can omit the cheese if you don't like it - it'll taste just as great!
Cheddar Cauliflower Soup
Ingredients
1/2 head of cauliflower
4 cups vegetable broth (you can use chicken broth as well)
4 cloves of garlic
1 whole yellow onion
1 cup sharp cheddar cheese, more for garnish and even more if you like it super cheesy
Salt and pepper to taste
  1. Fill a pot with some water and toss in the cauliflower and garlic. Boil for about 8-10 minutes, until the vegetables are tender.
  2. In a separate soup pot, bring the vegetable broth to boil.
  3. Roughly cut up the onion and add it to the vegetable broth.
  4. As soon as the cauliflower and garlic are ready, drain the water.
  5. At this point, the onions should be soft and cooking up really well in the vegetable broth.
  6. Now, you will need to put the cauliflower, garlic, vegetable broth and onions into a blender. Be careful as the soup is really hot at this point.
  7. Puree the entire mixture until smooth.
  8. Transfer everything back into soup pot over a medium low heat.
  9. Mix in the cheese and add the salt and pepper to taste.
  10. As soon as all of the cheese melts, it is ready to serve. Ladle the soup into separate bowls and add some grated cheese for garnish.
Super easy, super delicious and it doesn't take up that much time! I just made this with what I had left in our pantry. You could probably substitute the cauliflower with any other vegetables you have on hand (i.e. broccoli, potatoes, etc.). You can even omit the cheese as well! This soup, surprisingly, was very filling, warming and perfect for a day with such miserable weather! I hope you too can enjoy this as much as I have!
