Sweet and Tangy Garlic Lemon Chicken Breasts

I made dinner last night and it was awesome! So awesome that I wanted to share it with you guys. Seriously, nothing like a healthy, succulent, mouth watering sweet and tangy chicken breast for dinner. It wasn't dry and it was so tasty! Even the hubby loved it!

This meal is easy and requires no prep, making it a perfect week night meal. It is also so versatile that you can make it with any number of sides (i.e. mash, steamed vegetables, rice, etc.). I made this last night with a side of snow peas and steamed cauliflower with garlic butter. It was refreshing, tasty and at the same time filling. Sweet and Tangy Garlic Lemon Chicken Breasts
Ingredients
2 boneless and skinless chicken breasts
2 T. olive oil
2 T. lemon juice
2 T. packed brown sugar
2 T. maple syrup
2 T. minced garlic
  1. Set your oven at 400 degrees Fahrenheit.
  2. Wash and thoroughly dry the chicken breasts.
  3. Place the chicken breasts side by side in an oven safe dish.
  4. Using a skewer or a fork, poke several holes into each chicken breast. This will allow the glaze to seep into the breast, making it more tasty and flavorful.
  5. In a pan over medium low heat, heat up the olive oil.
  6. Add the minced garlic and stir until fragrant.
  7. Remove this mixture from the fire and stir in the brown sugar. Once melted, add the maple syrup and lemon juice, mixing until well combined.
  8. Take this glaze and pour over the chicken breasts.
  9. Place the dish, uncovered into the oven. Let it bake for 35 minutes.
Once ready, you can serve the chicken breast whole or slice it up as I did in the image shown. Please note that cooking times may vary depending on the thickness of the chicken breasts. Be sure to check that your chicken is cooked through prior to serving! Also, feel free to use any part of the chicken that you'd like. If doing so, be sure to adjust the cooking time as well.
